Ingredients

  • 6 Bay Leaves
  • 2 Tbsp Olive Oil
  • 250ml Red Wine
  • 250ml Beef Stock
  • 120g Frozen Peas
  • 1.5kg Pork Shoulder
  • 2 Sprigs of Rosemary
  • 2 Garlic Bulbs (minced)
  • 4 Medium Carrots (diced)
  • 1 Tbsp Black Peppercorns
  • 450g Small Red Potatoes (cubed)

Method

  1. Firstly, carefully remove the fat from the pork shoulder, cut into 2 inch cubes and season with salt and pepper. In a large frying pan, heat the olive oil over a medium heat and brown the meat. Once the meat is evenly browned, place the joint into the slow cooker. Add all the other ingredients, put the lid on and cook on the low setting for around 6-8 hours.

  2. Once cooked, remove the sprigs of rosemary and bay leaves, serve with seasonal vegetables enjoy.

Cooks Notes

  • We suggest serving with warm crusty bread with lashings of butter for that extra comfort.
