Mason Cash Chocolate Cake With Guinness Stout Recipe

Ingredients
For the sponge:
- 150ml Guinness
- 150ml buttermilk
- 3 medium eggs
- 250g plain flour
- 1 tsp bicarbonate of soda
- 50g cocoa powder
- 100g caster sugar
- 150g dark brown sugar
- 175g melted butter
For the frosting:
- 300g full fat cream cheese at room temperature
- 150g butter at room temperature
- 1tsp vanilla extract
- 150g icing sugar
- 20g chocolate of your choice to garnish

Method
- Preheat the oven to 160°C/Gas Mark 3.
- Grease and line both 8" cake tins.
- Gently melt the butter in a small saucepan over a low heat, then set aside to cool slightly.
- Pour the melted butter into a large bowl and add the buttermilk, eggs, sugars, Guinness, and cocoa powder.
- Whisk together until the mixture is well combined.
- Sift the plain flour into the bowl then add the bicarbonate of soda and whisk until you have a smooth batter.
- Pour the mixture evenly into the cake tins and bake for 25 minutes or until a skewer inserted into the centre comes out clean.
- Time to make the frosting: Cube the butter and place it into a large bowl. Beat or whisk until smooth and creamy.
- Gradually add the icing sugar in stages and mix until there are no lumps.
- Add the vanilla and cream cheese and mix well, scraping around the bowl to ensure all the mixture is fully incorporated. Set aside.
- Once the cakes are baked, leave them in their tins for about 15 minutes, then remove and place on a wire rack to cool.
- When the cakes have cooled completely, place the flatest cake layer upside down onto a serving plate or cake board. Spread half of the cream cheese frosting on top, then place the other cake layer, peak up, on top.
- Spread the remaining frosting on top evenly and garnish with the grated chocolate of your choice.
- Put your feet up and enjoy!
