Ingredients
For the cookies:
- 130g brown sugar
- ½ teaspoon baking powder
- 1 egg
- 190g plain flour
- 70g caster sugar
- ½ teaspoon salt
- 80g unsalted melted butter
- 1 teaspoon vanilla extract
- 4 scoops of your favourite ice cream
For the flavours:
Raspberry:
- 80g of frozen raspberries plus a few extra berries to garnish
Blueberry and White Chocolate:
- 80g of frozen blueberries
- 50g of chopped white chocolate, plus a few extra berries and some shaved chocolate to garnish
Mint Chocolate:
- 100g of a chocolate mint crisp bar (any chocolate with a mint crisp centre) Plus a little melted chocolate to garnish
EQUIPMENT

Method
- Preheat the oven to 180°C/Fan oven 170°C/Gas Mark 4
- Gently melt the butter in a small saucepan over a low heat, then set aside to cool slightly.
- Add the brown sugar, caster sugar and vanilla extract to the melted butter, and stir until the mixture is well combined.
- In a separate bowl, mix together the plain flour, salt, and baking powder. Add the butter mixture and crack the egg in, then gently fold everything together until everything is evenly mixed.
- Add your desired flavouring and fold through gently.
- Pour the mixture evenly into lightly buttered Le Creuset Mini Casseroles.
- Bake for 15–20 minutes, or until a skewer inserted into the center comes out clean.
- Allow to cool for 10 minutes, then serve warm with scoops of your favourite ice cream.
- Take a moment to relax and delight in every warm, gooey bite.
