Ingredients
- 500g mini gnocchi (2 x 250g)
- 30g walnuts, toasted
- 50g grated Pecorino Romano or Parmesan cheese
- 6 garlic cloves
- 225g red beetroot (about 2 large), peeled and chopped into quarters
- 120ml double cream
- 2 shallots, peeled and halved
- 135ml olive oil
- Coarse salt
- Burrata (optional, to garnish)

Method
Preheat your oven to 220 °C.
In the Glinda Signature Round Casserole, combine beetroot quarters, shallots, and whole garlic cloves. Add 15ml of olive oil and season with coarse salt, mixing so everything is coated. Cover the pot and roast for 45 minutes, or until the beetroot is tender when pierced.
Remove from oven and cool slightly. Transfer vegetables to a blender or food processor along with Pecorino (or Parmesan), walnuts, 120ml olive oil, and a pinch of salt. Purée until completely smooth, adding more olive oil if needed for consistency.
Bring water to a boil in the Round Casserole, and cook the gnocchi. Before draining, reserve 240ml of the cooking water.
Return the liquid to the casserole and bring to a boil. Add gnocchi back in and cook for 30 seconds, letting the water around them turn glossy.
Stir in 240ml of your beetroot purée, then remove from the heat and continue stirring until thick and glossy. Add 120ml of cream and stir until silky.
Serve straight from the pot. Optionally, top with burrata and a light dusting of Pecorino Romano for a touch of shimmer.
