Ingredients:


  • 4 large flour tortillas
  • 4 potatoes (peeled, diced, and cooked)
  • 8 eggs (scrambled)
  • 450g bacon, cooked until crispy and crumbled
  • Approx. 200–250g cheddar cheese, grated (adjust to taste)
  • 2 - 3 sliced spring onions
  • Salt & pepper to taste

Optional toppings:

  • Salsa or hot sauce
  • Sour cream
  • Fresh coriander

Method

  1. In a large bowl, combine the cooked potatoes, bacon, scrambled eggs, grated cheese, and spring onions. Season with a pinch of salt and pepper.
  2. Spoon the mixture evenly onto each tortilla and fold them into burritos.
  3. Wrap each burrito tightly in foil and store them in a zip-lock bag or lidded container until you’re ready to heat.
  4. When you're ready to eat, place the foil-wrapped burritos over a campfire, barbecue or in the oven. Heat for 10–15 minutes, or until warmed through and the cheese is melted.
  5. Carefully unwrap, top with salsa, sour cream or coriander if using, and enjoy!

Tips & Tricks:


Swap the spuds – In a hurry? Cooked hash browns or even potato waffles make a great alternative to fresh potatoes. Just make sure they’re cooked until golden and crispy before adding them to your burritos.


Freezer-friendly for campers - These burritos can be frozen ahead of time, making them ideal for camping trips. Wrap each one first in a sheet of paper towel, then in foil – this helps prevent them from going soggy. When you're ready to use them, let them defrost overnight and simply remove the paper towel and re-wrap in foil before reheating over a campfire or barbecue.


BBQ-safe wrapping – If you're heating them on a barbecue or campfire, double-wrap the burritos in foil to help prevent burning or scorching while they heat through.


Add a smoky kick – Fancy a little heat? Try adding 1 tsp of chipotle flakes to the egg or potato mix for a subtle, smoky spice that pairs perfectly with the bacon and cheese.
