American Pancakes With Bacon & Maple Syrup

Whether it’s Pancake Day or not, you’ll love these easy American Pancakes with crispy bacon and maple syrup. They’re so light and fluffy, yet still thick - the perfect combination for a superior pancake experience.

American Pancakes

Recipe Information

  • Prep Time: 20 Minutes 
  • Cooking Time: 10 Minutes 
  • Makes: Approx 6 large pancakes

 

Ingredients

  • 210g plain flour
  • 50g sugar (granulated or caster)
  • 2 tsp baking powder
  • 55g butter, plus a little extra aside
  • 2 tsp vanilla extract
  • 2 large eggs
  • 240ml full fat milk
  • Zest of one lemon (optional)

 

Method

  1. Sift the flour, sugar and baking powder together and mix well

  2. In a separate bowl, melt the butter a little. Then add the vanilla, eggs, milk and lemon zest (if using) and mix well

  3. Add the wet mixture to the dry mixture and gently fold in

  4. Add a little butter to a small non-stick crepe or frying pan on a low-medium heat, then add 2-3 tbsp of the batter

  5. Heat until golden brown (approx 1-2 minutes) then flip and heat for a further minute or so until golden

  6. Remove from heat and set aside, then repeat with the remaining batter

 

Bacon

Ingredients

  • 1 pack of streaky bacon

 

Method

  1. Cut each rasher into small bite size pieces

  2. Lay in a single layer across the bottom of an air fryer, making sure there are no overlaps

  3. Close the air fryer and set the temperature to 200°C, and start frying for 6 minutes

  4. Check the bacon. If it isn't crispy enough, return to the air fryer and check minute by minute until your desired consistency is achieved

  5. Remove from the air fryer carefully (it will be hot). Place on kitchen towel to drain any excess fat

  6. Drizzle your pancakes with maple syrup, top with bacon pieces, and drizzle some more - enjoy!
